Centerplate unveils new food items on the Falcons concourse

A new trio of foods will be debut at the Springfield Falcons home opener on Oct. 10.

The three new items available on the MassMutual Center Concourse are a Pulled Pork Sandwich served with a tangy and sweet coleslaw, a Four Cheese Mac & Cheese and a spicy Buffalo Chicken Mac & Cheese.

“The Four Cheese Mac & Cheese has cheddar, Monterrey Jack, Parmesan and mozzarella with a nice cream sauce,” said Alan Judkins, executive chef for Centerplate.

“We can tweak it up a bit for people who want it a little bit different.  We’re going to add a grilled chicken breast and the buttered Buffalo sauce that we use on the wings.  That butter really smooths the palate and lightens it up a little.”

Diane Leader, general manager of Centerplate, shared that the spicy option is a riff on their Ghost Pepper Wings and something hearty for winter.

“People always think concessions is just a hot dog but we offer so much more.  It’s about getting people engaged and excited about food,” she said.

The Pulled Pork Sandwich is made with ingredients from Arnold’s Meats in Chicopee and Chef Judkins slow roasts the cuts.

“Depending on the size of the cut, it’ll take anywhere from five to seven, even ten hours to slow roast in the oven.  It literally just falls off the bone,” said Judkins.

“Toss it with Sweet Baby Rays barbeque sauce, that mixes perfectly with the flavor of the rub, and then you get that cole slaw on the top.  I get goose bumps talking about it — I love food and I can’t help it!”

All items will be served over in the Dog House, located in Stand 5 near Section 3.  Price points at press time are still to be decided.

A little unique, because most arenas don’t have an executive chef on hand, Centerplate adds new items to the menu each year.  For them, it’s about offering something new for guests who come here game after game and year after year.

“We’re very fortunate that Centerplate is a wonderful food and beverage provider at the MassMutual Center,” said Springfield Falcons President Sarah Pompea.

“This is another innovative way that centerplate is staying on par with what’s trending currently and I’m sure our fans will enjoy it this season.”
