In 1996 Chef Wayne Hooker entered the Springfield food market and took it by storm with the opening of Chef Wayne’s Big Mamou on Liberty Street by introducing Cajun inspired cuisine. He had a vision to bring something new, different, and interesting to the restaurant scene of New England. Now, 23 years later, Chef Wayne saw an opportunity to serve an underserved market in Springfield and surrounding communities through take-out and delivery. With this idea in mind, Chef Wayne began his search for a prime location and like-minded partners.

In July 2019, Chef Wayne joined forces with Chef Ivan Felix and Dr. Lisa Wyatt to open Chef Wayne’s Big Mamou: Cajun on the Go in the parking lot of 350 Worthington St, transforming 205 square feet into a take-out and delivery kitchen.

The location, affectionately known as “the hut” continues the Big Mamou tradition of serving Cajun inspired cuisine with the addition of house made smoked meat dishes. The Cajun on the Go menu is designed with the lunch and early dinner crowd in mind – building on the convenience of delivery through Grubhub and the staff at the hut.
